These Viral Crispy Garlic Parmesan Crusted Potatoes are a decadent and flavorful side dish made by baking halved Yukon Gold potatoes coated with a butter, garlic, parsley, and Parmesan cheese crust until golden and crispy.

- 1 Pound Mini Yukon Gold Potatoes (halved)
- 2 Tablespoons Olive Oil
- 1 Tablespoon Dried Parsley
- 1 Tablespoon Garlic Powder
- 1/2 Teaspoon Sea Salt
- 1/2 Teaspoon Ground Black Pepper
- 1/4 Cup Unsalted Butter (melted)
- 1 1/2 Cups Parmigiano Reggiano (freshly grated)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash the mini Yukon Gold potatoes and cut each potato in half.
- Make diagonal cuts along the cut side of each halved potato.
- In a large bowl, combine the potatoes with olive oil, dried parsley, garlic powder, sea salt, and black pepper. Toss well.
- In a separate bowl, mix the grated Parmigiano Reggiano with melted unsalted butter until a paste forms.
- Spread the cheese and butter paste evenly across the bottom of a large baking dish.
- Place the seasoned potato halves cut-side down on top of the cheese mixture.
- Bake the potatoes for 25 to 26 minutes.
- Remove the dish from the oven and let the potatoes rest for 10 minutes.
- Use a spatula to lift the crispy, cheesy potatoes from the dish and serve immediately.
