Description

These Viral Crispy Garlic Parmesan Crusted Potatoes are a decadent and flavorful side dish made by baking halved Yukon Gold potatoes coated with a butter, garlic, parsley, and Parmesan cheese crust until golden and crispy.


Ingredients

  • 1 Pound Mini Yukon Gold Potatoes (halved)
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Dried Parsley
  • 1 Tablespoon Garlic Powder
  • 1/2 Teaspoon Sea Salt
  • 1/2 Teaspoon Ground Black Pepper
  • 1/4 Cup Unsalted Butter (melted)
  • 1 1/2 Cups Parmigiano Reggiano (freshly grated)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the mini Yukon Gold potatoes and cut each potato in half.
  3. Make diagonal cuts along the cut side of each halved potato.
  4. In a large bowl, combine the potatoes with olive oil, dried parsley, garlic powder, sea salt, and black pepper. Toss well.
  5. In a separate bowl, mix the grated Parmigiano Reggiano with melted unsalted butter until a paste forms.
  6. Spread the cheese and butter paste evenly across the bottom of a large baking dish.
  7. Place the seasoned potato halves cut-side down on top of the cheese mixture.
  8. Bake the potatoes for 25 to 26 minutes.
  9. Remove the dish from the oven and let the potatoes rest for 10 minutes.
  10. Use a spatula to lift the crispy, cheesy potatoes from the dish and serve immediately.
