Instructions
- Heat olive oil in a large soup pot over medium heat. Add chopped onion and garlic, sautéing until fragrant and slightly golden, about 2-3 minutes.
- Add the cubed pumpkin, chopped carrot, and peeled potato to the pot. Stir everything together for 5 minutes, allowing the vegetables to soften slightly and absorb the aromatics.
- Pour in the vegetable broth. Increase the heat to bring the soup to a boil, then reduce the heat to low, cover, and let it simmer for 20-25 minutes, or until the vegetables are completely tender.
