  • 4 carrots, chopped
  • 4 potatoes, quartered
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Pat the chuck roast dry with paper towels, then season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.
  3. Place the chopped onions, garlic, carrots, and potatoes in the bottom of the crock pot.
  4. Place the seared chuck roast on top of the vegetables in the crock pot.
  5. In a separate bowl, combine beef broth, Worcestershire sauce, thyme, and rosemary. Pour this mixture over the roast and vegetables.
  6. Cover the crock pot and cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the meat is fork-tender.
  7. About 30 minutes before serving, taste and adjust seasoning with more salt and pepper if needed.
  8. Once done, remove the roast and let it rest for about 10 minutes before slicing. Serve with the vegetables and some of the broth.
