Ingredients

Scale
  • 1 cup mashed and cooked sweet potato
  • 4 cups all-purpose flour
  • 1 cup warm milk
  • 1/4 cup melted unsalted butter
  • 1/3 cup sugar
  • 1 teaspoon salt
  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 2 large eggs

Instructions

  1. Cook and mash sweet potato until smooth. Set aside.
  2. Mix warm milk with yeast and sugar. Let sit for 5 minutes until bubbly.
  3. In a bowl, combine mashed sweet potato, melted butter, eggs, salt, and the yeast mixture. Stir well.
  4. Gradually add flour to form a sticky dough.
  5. Knead on a floured surface for about 8 minutes until smooth.
  6. Place dough in a greased bowl, cover, and let rise for 1-2 hours.
  7. Punch down the dough, divide, and shape into 12-15 rolls.
  8. Place shaped rolls on a baking sheet, cover, and let rise for another 30 minutes.
  9. Preheat oven to 375°F (190°C).
  10. Bake for 20-25 minutes, or until golden brown.

Notes

  • Peel and cube sweet potato for faster cooking.
  • A slightly sticky dough is okay; resist adding too much extra flour.
  • Check rolls at 20 minutes as oven temperatures can vary.
  • For freezing, shape the rolls, then thaw and let them rise before baking.
  • Brush rolls with butter immediately after baking for extra flavor.
