Description

A delightful Spiralized Beet Salad combining earthy beets, zesty orange juice, and crunchy pistachios for a fresh flavor burst.


Ingredients

  • 3 medium beets (peeled and spiralized)
  • 1 cup orange juice (freshly juiced)
  • 1/2 cup mint leaves (thinly sliced)
  • 1/2 cup pistachios (finely chopped)
  • 2 tablespoons white balsamic vinegar
  • 1 teaspoon honey
  • 2 tablespoons extra-virgin olive oil
  • salt and pepper (to taste)

Instructions

  1. Spiralize the beets by peeling them and using a spiralizer to create beet noodles.
  2. Mix the dressing in a mason jar by combining orange juice, white balsamic vinegar, honey, salt, pepper, and olive oil. Shake until smooth.
  3. In a large bowl, add the spiralized beets and pour the dressing over them. Toss gently.
  4. Fold in the mint leaves and pistachios. Toss again until evenly distributed.
  5. Serve immediately for the best flavor and texture.
