Ingredients

- 3 medium beets (peeled and spiralized)
- 1 cup orange juice (freshly juiced)
- 1/2 cup mint leaves (thinly sliced)
- 1/2 cup pistachios (finely chopped)
- 2 tablespoons white balsamic vinegar
- 1 teaspoon honey
- 2 tablespoons extra-virgin olive oil
- salt and pepper (to taste)
Instructions
- Spiralize the beets by peeling them and using a spiralizer to create beet noodles.
- Mix the dressing in a mason jar by combining orange juice, white balsamic vinegar, honey, salt, pepper, and olive oil. Shake until smooth.
- In a large bowl, add the spiralized beets and pour the dressing over them. Toss gently.
- Fold in the mint leaves and pistachios. Toss again until evenly distributed.
- Serve immediately for the best flavor and texture.
