- 1 cup Dairy-free Sweetened Condensed Milk
- 2 cups Fine Shredded Coconut (Roll extra coconut for coating.)
- 1 cup Vegan White Chocolate / White Candy Melts (Ensure the product is dairy-free.)
- 1 tube Black Icing (Store-bought or homemade may be used.)
- 1 tube Orange Icing (Can be bought or made easily.)
- 12 sticks Thin Pretzel Sticks (Size: 2 inches (5 cm) each.)
- 12 straps Red Candy Straps (Optional decoration.)
Instructions
- In a large bowl, combine 2 cups of fine shredded coconut with 1 cup of dairy-free sweetened condensed milk. Blend until fully combined, creating a dense, sticky consistency.
- Dampen your hands and roll the mixture into 12 larger balls for bodies and 12 smaller balls for heads. Roll each in extra shredded coconut for coating.
- To assemble, press a smaller ball on top of a larger ball, securing them with melted vegan white chocolate.
- Place the assembled snowmen on a baking sheet lined with parchment paper to firm up for 30 minutes at room temperature or 15 minutes in the refrigerator.
- Using black icing, pipe small dots for eyes and buttons, and use orange icing for the nose.
- Insert two thin pretzel sticks into the sides for arms and wrap red candy straps around the necks as scarves.
- Store truffles in an airtight container; they keep at room temperature for 1 day, in the fridge for 1 week, or in the freezer for 1 month.
