Instructions

  1. Preheat your oven to 400 degrees F (204 degrees C) and adjust one of the oven racks to one level higher than the middle position. Line a baking sheet with a silicone baking mat or parchment paper.
  2. Using an electric mixer, beat the softened vegan butter, vanilla extract, and ½ cup powdered sugar together for 3 to 4 minutes until creamy.
  3. In a separate bowl, whisk together the flour and salt.
  4. Gradually add the flour and salt mixture to the creamed vegan butter mixture. Mix well until a soft dough forms.
  5. Scoop about two tablespoons of dough and roll it into balls. Arrange these on the prepared baking sheet.
  6. Bake for 9 to 10 minutes, until the bottoms are lightly browned and the tops remain soft.
  7. Remove from the oven and let cool on the baking sheet for 5 minutes. Then, roll each cookie in powdered sugar.
  8. Transfer the cookies to a cooling rack and let them cool completely for about 1 hour.
