- 4 boneless, skinless chicken breasts (or thighs)
- 4 medium potatoes, diced
- 2 carrots, peeled and sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 cup frozen peas (optional)
- 2 tablespoons cornstarch (optional, for thickening)
- 2 tablespoons water (for thickening)
Instructions
- Dice the potatoes, slice the carrots, chop the onion, and mince the garlic. Place all vegetables in the bottom of the slow cooker.
- Place chicken breasts (or thighs) on top of the vegetables. Sprinkle thyme, rosemary, salt, and pepper over the chicken. Pour the chicken broth over everything.
- Cover and cook on low for 6-7 hours or high for 3-4 hours. Shred the chicken if preferred, then return it to the slow cooker.
- Mix 2 tablespoons of cornstarch with 2 tablespoons of water to make a slurry. Stir into the stew and cook for an additional 15 minutes on high.
- In the last 10 minutes of cooking, add frozen peas and allow to warm through.
- Ladle the stew into bowls and serve hot with a slice of crusty bread.
