Slow Cooker Chicken Stew is the ultimate comfort food, combining tender chicken, hearty vegetables, and savory herbs to create a flavorful, hands-off meal.


Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 4 medium potatoes, diced
  • 2 carrots, peeled and sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup frozen peas (optional)
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons water (for thickening)

Instructions

  1. Dice the potatoes, slice the carrots, chop the onion, and mince the garlic. Place all vegetables in the bottom of the slow cooker.
  2. Place chicken breasts (or thighs) on top of the vegetables. Sprinkle thyme, rosemary, salt, and pepper over the chicken. Pour the chicken broth over everything.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours. Shred the chicken if preferred, then return it to the slow cooker.
  4. Mix 2 tablespoons of cornstarch with 2 tablespoons of water to make a slurry. Stir into the stew and cook for an additional 15 minutes on high.
  5. In the last 10 minutes of cooking, add frozen peas and allow to warm through.
  6. Ladle the stew into bowls and serve hot with a slice of crusty bread.
