This slow cooker chicken alfredo with broccoli recipe is an easy and delicious way to make a creamy, comforting Italian-inspired pasta dish. Perfect for busy weeknights, it requires minimal effort and yields a satisfying meal the whole family will love.

Ingredients

Scale
  • 1.5 pounds boneless, skinless chicken breasts
  • 2 cups broccoli florets (fresh or frozen)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 12 ounces fettuccine pasta
  • Fresh parsley (for garnish)

Instructions

  1. Place the boneless, skinless chicken breasts at the bottom of the slow cooker.
  2. Add the broccoli florets over the chicken.
  3. In a bowl, mix the heavy cream, chicken broth, garlic powder, onion powder, salt, and pepper. Pour this mixture over the chicken and broccoli.
  4. Cover and cook on low for 4 hours or on high for 2 hours, until the chicken is tender and fully cooked.
  5. About 15-20 minutes before serving, cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
  6. Shred the cooked chicken directly in the slow cooker using two forks. Stir gently to mix with the alfredo sauce and broccoli.
  7. Stir in the grated Parmesan cheese until it melts and combines with the sauce.
  8. Add the cooked fettuccine to the slow cooker and toss everything together until well-coated with the sauce.
  9. Serve hot, garnished with fresh parsley.

Notes

  • For a saucier pasta, reserve some alfredo sauce to drizzle over individual servings.
  • This dish tastes even better the next day.
  • Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
  • Freeze for up to 3 months in a freezer-safe container. Reheat thoroughly before serving, adding a splash of cream or broth if needed.
