- 2 eggs, beaten
- 1 tablespoon dehydrated onions
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika

- 8 slices American cheese
- 12–14 oz bag coated potato wedges or fries

- Shredded lettuce, for serving

Instructions
- Prep base. Cook potato wedges or fries according to package directions until crispy while you make the salmon.
- Make salmon mixture. Drain salmon very well. In a large bowl, whisk together eggs, dehydrated onions, Worcestershire, smoked paprika, salt, and pepper. Add drained salmon and panko, folding gently until evenly distributed.
- Form and chill. Shape into 8 equal balls and refrigerate for 20 minutes.
- Get that skillet hot. Heat 2 tablespoons neutral oil in a large cast iron skillet over medium-high heat.
- Smash and break. Place salmon balls in skillet, cover with parchment, and smash flat. Cook 3-4 minutes until crispy edges form. Flip, then immediately use your spatula to break each patty into fork-sized pieces for easier eating.
- Add cheese. Lay cheese slices over the broken-up salmon pieces. Cook another 60 seconds until melted.
- Build bowls. Start with a bed of shredded lettuce in each bowl. Add a generous serving of crispy fries to one side. Top with cheesy salmon burger pieces, diced tomatoes, and pickles. Drizzle generously with burger sauce.
