It’s a deconstructed take on a smash burger, perfect for using leftover salmon patties or for a delicious, fork-friendly meal.

Ingredients

Scale
  • 1415 oz canned salmon, drained well
  • ½ cup panko breadcrumbs
  • 2 eggs, beaten
  • 1 tablespoon dehydrated onions
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • ½ teaspoon kosher salt
  • Black pepper, to taste
  • 2 tablespoons neutral oil
  • 8 slices American cheese
  • 1214 oz bag coated potato wedges or fries
  • Best Burger Sauce, for serving
  • Shredded lettuce, for serving
  • Diced tomatoes, for serving
  • Diced pickles, for serving

Instructions

  1. Prep base. Cook potato wedges or fries according to package directions until crispy while you make the salmon.
  2. Make salmon mixture. Drain salmon very well. In a large bowl, whisk together eggs, dehydrated onions, Worcestershire, smoked paprika, salt, and pepper. Add drained salmon and panko, folding gently until evenly distributed.
  3. Form and chill. Shape into 8 equal balls and refrigerate for 20 minutes.
  4. Get that skillet hot. Heat 2 tablespoons neutral oil in a large cast iron skillet over medium-high heat.
  5. Smash and break. Place salmon balls in skillet, cover with parchment, and smash flat. Cook 3-4 minutes until crispy edges form. Flip, then immediately use your spatula to break each patty into fork-sized pieces for easier eating.
  6. Add cheese. Lay cheese slices over the broken-up salmon pieces. Cook another 60 seconds until melted.
  7. Build bowls. Start with a bed of shredded lettuce in each bowl. Add a generous serving of crispy fries to one side. Top with cheesy salmon burger pieces, diced tomatoes, and pickles. Drizzle generously with burger sauce.

Notes

  • Air fryer fries: Cook at 400°F for 12-15 minutes, shaking halfway through.
  • Oven method: Bake fries at 425°F for 20-25 minutes until crispy.
  • Leftover hack: Got leftover salmon burgers? Break them up, warm through with cheese, and serve over salad and fries.
