- 1 ½ cups chopped cooked corned beef
- 1 cup chopped sauerkraut (thoroughly drained)
- 1 cup shredded Swiss cheese
- 4 oz cream cheese, softened
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and pepper to taste
- 1 cup all-purpose flour (for dredging)
- 2 eggs, beaten
- 1 ½ cups breadcrumbs (panko or regular)
- Vegetable oil, for frying
- ½ cup mayonnaise
- 2 tbsp ketchup
- 2 tbsp finely chopped pickles
- 1 tsp hot sauce (adjust to taste)
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and pepper to taste
Instructions
- In a large bowl, mix corned beef, sauerkraut, Swiss cheese, cream cheese, garlic powder, onion powder, salt, and pepper until well combined.
- Roll into 1-inch balls and place on a baking sheet. Chill for 30 minutes to firm up.
- Set up dredging bowls with flour, eggs, and breadcrumbs. Coat each ball in flour, then egg, then breadcrumbs.
- Heat oil to 350°F (175°C). Fry balls in batches for 2–3 minutes until golden brown. Drain on paper towels.
- Cook at 375°F for 8–10 minutes, flipping halfway.
- Combine mayonnaise, ketchup, pickles, hot sauce, and spices. Stir and refrigerate for 15 minutes before serving.
- Serve Reuben Balls hot with spicy Thousand Island sauce for dipping. Garnish with parsley if desired.
