Description

Delicious Red Wine Mushroom Sauce for Gourmet Home Dinners

Ingredients

Scale
  • 2 tablespoons Butter (unsalted)
  • 1 tablespoon Olive oil
  • 8 oz Mushrooms (shiitake, portobello, or oyster, sliced)
  • 2 Shallots (finely chopped)
  • 3 Garlic (minced)
  • ¾ cup Red wine (Cabernet Sauvignon or Merlot)
  • 1 cup Beef broth
  • 1 teaspoon Fresh thyme (or ½ teaspoon dried thyme)
  • Salt and freshly ground black pepper (to taste)
  • 1 tablespoon All-purpose flour (for thickening the sauce, if desired)
  • 1 tablespoon Heavy cream (for a silky finish)

Instructions

  1. Prepare ingredients: Start by thinly slicing the mushrooms, finely chopping the shallots, and mincing the garlic to set yourself up for a seamless cooking experience.
  2. Heat the pan: In a large skillet, heat 1 tablespoon of butter along with 1 tablespoon of olive oil over medium heat. Once the butter has melted and the oil begins to shimmer, you’re ready for the mushrooms!
  3. Sauté mushrooms: Add the sliced mushrooms to the pan and cook them for about 5–7 minutes, stirring occasionally, until they are golden brown and slightly crispy around the edges.
  4. Add shallots: Lower the heat slightly and toss in the finely chopped shallots. Cook for 2–3 minutes until they soften and begin to turn translucent, adding a hint of sweetness.
  5. Incorporate garlic: Stir in the minced garlic and let it cook for an additional minute until fragrant.
  6. Deglaze with wine: Raise the heat back to medium-high and pour in ¾ cup of red wine, scraping up any flavorful bits stuck to the bottom of the pan.
  7. Simmer and reduce: Allow the wine to simmer for about 5 minutes, letting it reduce by half.
  8. Add broth and thyme: Pour in 1 cup of beef broth and stir in 1 teaspoon of fresh thyme. Let everything simmer together for another 7–10 minutes.
  9. Season to taste: Taste your sauce and adjust with salt and pepper as needed.
  10. Thicken (optional): Whisk in 1 tablespoon of all-purpose flour for thickness. For an indulgent touch, stir in 1 tablespoon of heavy cream.
