Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Combine melted unsalted butter with light brown sugar and granulated sugar in a large bowl until creamy.
- Incorporate pumpkin puree, eggs, and vanilla extract into the butter-sugar mixture until smooth.
- In a separate bowl, whisk together flour, baking powder, baking soda, salt, pumpkin pie spice, and cinnamon.
- Gradually add dry ingredients to wet mixture, stirring gently until just combined.
- Drop rounded scoops of batter onto the prepared baking sheet, leaving space between each scoop.
- Bake for about 9 minutes or until cookies are set and slightly puffed, then cool.
- Beat softened cream cheese with remaining unsalted butter, then gradually add powdered sugar to reach desired thickness.
- Once cookies are cool, pipe or spread cream cheese frosting onto the flat side of one cookie, then top with another.
