Description

These Pumpkin Whoopie Pies are soft, spiced cookies filled with a dreamy cream cheese frosting. They capture the essence of fall and make a perfect autumn treat.

Ingredients

Scale
  • 1 cup Unsalted Butter, melted and cooled
  • 1 cup Light Brown Sugar, packed firmly
  • 1 cup Granulated Sugar
  • 1 cup Pumpkin Puree
  • 2 large Eggs, room temperature
  • 1 teaspoon Vanilla Extract
  • 2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 2 teaspoons Pumpkin Pie Spice
  • 1 teaspoon Ground Cinnamon
  • 8 ounces Cream Cheese, softened
  • 1 cup Powdered Sugar, adjust for thickness

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Combine melted unsalted butter with light brown sugar and granulated sugar in a large bowl until creamy.
  3. Incorporate pumpkin puree, eggs, and vanilla extract into the butter-sugar mixture until smooth.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, salt, pumpkin pie spice, and cinnamon.
  5. Gradually add dry ingredients to wet mixture, stirring gently until just combined.
  6. Drop rounded scoops of batter onto the prepared baking sheet, leaving space between each scoop.
  7. Bake for about 9 minutes or until cookies are set and slightly puffed, then cool.
  8. Beat softened cream cheese with remaining unsalted butter, then gradually add powdered sugar to reach desired thickness.
  9. Once cookies are cool, pipe or spread cream cheese frosting onto the flat side of one cookie, then top with another.

Notes

  • For extra flavor, consider adding a little brown butter to the cream cheese filling.
  • Refrigerate whoopie pies overnight for enhanced taste.
  • Use fresh baking powder and baking soda for optimal rise.
  • Do not overmix the batter for soft, cakey cookies.
  • Allow cookies to cool completely before frosting.
