Description

Pumpkin French Toast is a comforting fall breakfast. It features thick slices of brioche bread coated in a spiced pumpkin custard, pan-fried to golden perfection. Enjoy the warm flavors of cinnamon, nutmeg, and ginger with every bite.

Ingredients

Scale
  • 8 slices of thick brioche or challah bread
  • 4 large eggs
  • 1 cup whole milk (or dairy-free alternative)
  • 1/2 cup pumpkin purée
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 2 tablespoons butter (for frying)
  • Maple syrup, whipped cream, or powdered sugar for serving

Instructions

  1. In a large mixing bowl, whisk together eggs, milk, pumpkin purée, brown sugar, cinnamon, nutmeg, ginger, vanilla extract, and a pinch of salt until smooth and well combined.
  2. Heat a large skillet or griddle over medium heat and melt 1 tablespoon of butter.
  3. Dip each slice of bread into the pumpkin mixture, ensuring both sides are well coated but not soggy.
  4. Place the coated bread slices onto the heated skillet and cook for 3–4 minutes per side, or until golden brown.
  5. Repeat with remaining slices, adding more butter as needed.
  6. Serve warm with maple syrup, a dusting of powdered sugar, or a dollop of whipped cream for an extra indulgent touch.

Notes

  • Use day-old bread for best results, as it absorbs the custard better without becoming soggy.
  • Cook on medium heat to ensure the inside cooks through while the outside turns golden brown.
  • You can prepare the custard mixture the night before to save time in the morning.
  • Leftovers can be stored in an airtight container in the refrigerator for up to three days and reheated in a toaster oven or skillet.
