  • 4 cloves garlic, minced

  • 1 can (15 oz or 425g) black beans, drained
  • 1 can (15 oz or 425g) kidney beans, drained
  • 1 can (15 oz or 425g) diced tomatoes (with juices)
  • 1 can (15 oz or 425g) pumpkin purée (not pumpkin pie filling)
  • 2 tablespoons tomato paste
  • 1 cup (240ml) water
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt (or to taste)

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and minced garlic and sauté for about 5 minutes, until the onion becomes translucent and fragrant.
  2. Add the ground beef to the pot. Cook until browned, breaking up the meat with a spoon. Drain excess fat if needed.
  3. Stir in the drained black beans, kidney beans, diced tomatoes with their juices, pumpkin purée, tomato paste, and water. Mix everything together.
  4. Add the chili powder, smoked paprika, ground cumin, garlic powder, onion powder, black pepper, and salt. Stir well to combine.
  5. Cover the pot, reduce the heat to low, and let the chili simmer gently for 30 minutes, stirring occasionally.
