- 12 oz Fresh oysters
- 1 cup Heavy cream
- 2 tbsp Unsalted butter
- 1 small Onion (finely chopped)
- 1 stalk Celery (finely chopped)
- 1 clove Garlic (minced)
- 2 cups Chicken or seafood broth
- 1 tbsp Worcestershire sauce
- 1 dash Hot sauce (optional)
- 1 tsp Salt
- 1 tsp Black pepper (freshly ground)
- 2 tbsp Fresh parsley (chopped)
- 1 cup Oyster crackers or crusty bread (for serving)
Instructions
- Drain the oysters, reserving their juice, and set aside.
- Finely chop the onion, celery, and garlic.
- In a large pot, melt the butter over medium heat. Add the chopped onion, celery, and garlic, and cook until soft, about 5 minutes.
- Season with salt and pepper while cooking.
- Pour in the broth and stir to combine. Bring to a simmer and cook for 5 minutes.
- Stir in Worcestershire sauce and hot sauce, adjusting seasoning to taste.
- Add the oysters along with their reserved juice and the heavy cream. Simmer over low heat for another 5-7 minutes.
- Taste and adjust salt, pepper, or hot sauce if needed.
- Ladle into bowls, garnish with parsley, and serve with oyster crackers or crusty bread.
