  • 1 small Onion (finely chopped)
  • 1 stalk Celery (finely chopped)
  • 1 clove Garlic (minced)
  • 2 cups Chicken or seafood broth
  • 1 tbsp Worcestershire sauce
  • 1 dash Hot sauce (optional)
  • 1 tsp Salt
  • 1 tsp Black pepper (freshly ground)
  • 2 tbsp Fresh parsley (chopped)
  • 1 cup Oyster crackers or crusty bread (for serving)

Instructions

  1. Drain the oysters, reserving their juice, and set aside.
  2. Finely chop the onion, celery, and garlic.
  3. In a large pot, melt the butter over medium heat. Add the chopped onion, celery, and garlic, and cook until soft, about 5 minutes.
  4. Season with salt and pepper while cooking.
  5. Pour in the broth and stir to combine. Bring to a simmer and cook for 5 minutes.
  6. Stir in Worcestershire sauce and hot sauce, adjusting seasoning to taste.
  7. Add the oysters along with their reserved juice and the heavy cream. Simmer over low heat for another 5-7 minutes.
  8. Taste and adjust salt, pepper, or hot sauce if needed.
  9. Ladle into bowls, garnish with parsley, and serve with oyster crackers or crusty bread.
