  • 1.5 pounds red potatoes, cut into 1-inch chunks
  • 3 tablespoons olive oil, divided
  • 1.5 tablespoons Cajun seasoning
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons fresh chopped parsley

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or grease it lightly.
  2. Wash and chop red potatoes into 1-inch chunks. Place in a large bowl.
  3. Toss potatoes with half the olive oil, half the Cajun seasoning, half the salt and pepper, and all the minced garlic. Ensure even coating.
  4. In a separate bowl, toss chicken thighs with the remaining olive oil, Cajun seasoning, salt, and pepper. Ensure each piece is well-coated.
  5. Spread the seasoned potatoes in a single layer on the prepared baking sheet.
  6. Nestle the seasoned chicken thighs among the potatoes, avoiding overcrowding.
  7. Roast for 35 to 40 minutes. Toss everything halfway through the cooking time for even browning and crispiness.
  8. Check that the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender and golden.
  9. Remove from oven. Immediately sprinkle the hot dish with grated Parmesan cheese.
  10. Garnish with fresh chopped parsley and let rest for 5 minutes before serving.
