- 1.5 pounds boneless skinless chicken thighs
- 1.5 pounds red potatoes, cut into 1-inch chunks
- 3 tablespoons olive oil, divided
- 1.5 tablespoons Cajun seasoning
- 4 cloves garlic, minced
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 0.25 cup grated Parmesan cheese
- 2 tablespoons fresh chopped parsley
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or grease it lightly.
- Wash and chop red potatoes into 1-inch chunks. Place in a large bowl.
- Toss potatoes with half the olive oil, half the Cajun seasoning, half the salt and pepper, and all the minced garlic. Ensure even coating.
- In a separate bowl, toss chicken thighs with the remaining olive oil, Cajun seasoning, salt, and pepper. Ensure each piece is well-coated.
- Spread the seasoned potatoes in a single layer on the prepared baking sheet.
- Nestle the seasoned chicken thighs among the potatoes, avoiding overcrowding.
- Roast for 35 to 40 minutes. Toss everything halfway through the cooking time for even browning and crispiness.
- Check that the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender and golden.
- Remove from oven. Immediately sprinkle the hot dish with grated Parmesan cheese.
- Garnish with fresh chopped parsley and let rest for 5 minutes before serving.

- Do not overcrowd the pan; use two baking sheets if necessary for maximum crispiness.
- Toss ingredients halfway through roasting for even cooking and browning.
