Ingredients

  • 2 kg Baby Back Ribs
  • 1 tablespoon brown sugar
  • 2 teaspoons smoked paprika
  • 2 teaspoons garlic salt
  • 1 teaspoon onion powder
  • 1 teaspoon freshly ground black pepper
  • 0.5 teaspoon cumin
  • 2 tablespoons olive oil
  • 2 cups barbecue sauce
  • 4 cloves garlic, finely chopped or minced
  • 0.5 tablespoon Worcestershire sauce

Instructions

  1. Begin by inspecting the back of the baby back ribs for any papery skin. Remove it if found.
  2. Line two baking trays with tin foil, creating a non-stick surface. Place the ribs comfortably on top.
  3. In a mixing bowl, combine brown sugar, smoked paprika, garlic salt, onion powder, black pepper, and cumin.
  4. Generously sprinkle the rub all over the ribs and drizzle with olive oil. Massage the rub into the meat.
  5. Cover the ribs with plastic wrap and set aside in the fridge for at least a few hours or overnight.
  6. Preheat your oven to 180°C / 350°F.
  7. Cover the ribs with cooking foil and bake in the preheated oven for 2 hours.
  8. While the ribs are baking, mix together barbecue sauce, minced garlic, olive oil, and Worcestershire sauce.
  9. After 2 hours, remove the ribs from the oven and increase the temperature to 240°C / 460°F.
  10. Uncover the ribs and smear them with the prepared sauce using a basting brush.
  11. Place the ribs back in the oven for an additional 10 minutes.
  12. Switch your oven setting to Grill (Broil) for 2-3 minutes until slightly blackened.
  13. Once grilled, remove the ribs from the oven and let them rest for 10 minutes.
  14. Slice the ribs into individual pieces and serve warm.
