Heartwarming Orzo Vegetable Soup for Cozy Nights at Home


Ingredients

  • 1 medium onion, diced
  • 1 medium carrot, diced
  • 1 stalk celery, diced
  • 3 cloves garlic, minced
  • 1/2 teaspoon red chili flakes (adjust based on heat preference)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 can chickpeas, drained and rinsed
  • 1 can cannellini beans, drained and rinsed
  • 1 cup orzo
  • 6 cups vegetable stock
  • 2 tablespoons lemon juice, freshly squeezed
  • 2 cups kale, roughly chopped
  • to taste salt
  • to taste black pepper

Instructions

  1. In a large stock pot or Dutch oven, pour in the olive oil and let it warm over medium heat. Add the diced onion, carrot, and celery, cooking for 6-7 minutes until softened and fragrant.
  2. Next, stir in the minced garlic along with the red chili flakes, thyme, oregano, and basil. Cook for an additional minute, allowing the herbs to release their delightful aromas.
  3. Add the drained and rinsed chickpeas, cannellini beans, orzo, and the vegetable stock. Stir everything together, bring to a boil, then reduce the heat and let it simmer for 10 minutes until the orzo is cooked.
  4. Stir in the fresh lemon juice and chopped kale. Simmer for 1-2 minutes, just until the kale wilts and brightens in color.
  5. Finally, taste the soup and season with salt and freshly ground black pepper to your preference. Serve hot and enjoy the comforting flavors!
