Description

A delicious and moist Orange Zucchini Bread recipe perfect for any occasion. This quick bread combines the freshness of zucchini with the bright flavor of orange, creating a delightful treat.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup orange juice
  • 1 tablespoon orange zest
  • 2 cups grated zucchini (about 2 medium zucchinis)
  • Optional: 1/2 cup chopped walnuts or pecans
  • Optional: Orange glaze (powdered sugar, orange juice)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, beat the granulated sugar and vegetable oil together.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract, orange juice, and orange zest.
  5. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  6. Fold in the grated zucchini and any optional nuts.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the Orange Zucchini Bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. If desired, prepare an orange glaze by mixing powdered sugar with a little orange juice until smooth, and drizzle over the cooled bread.

Notes

  • Ensure your zucchini is well-drained after grating to avoid a soggy bread.
  • For a sweeter bread, you can increase the sugar slightly.
  • This Orange Zucchini Bread stays moist for several days when stored in an airtight container at room temperature.
  • You can substitute lemon zest and juice for orange for a different citrus flavor.
