- 1 pound cooked lobster meat
- 2 tablespoons unsalted butter
- 1 small onion, finely chopped
- 1 cup heavy cream
- 1/2 cup milk
- 3 large egg yolks
- 1 tablespoon sherry or brandy
- 1 teaspoon Dijon mustard
- salt and pepper
- 1/4 teaspoon cayenne pepper (optional)
- 4 slices buttered toast or puff pastry shells
- Fresh parsley, chopped
Instructions
- In a large skillet, melt the unsalted butter over medium heat. Add the finely chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the chopped lobster meat and cook for an additional 2-3 minutes.
- In a separate bowl, whisk together the heavy cream, milk, egg yolks, sherry or brandy, Dijon mustard, salt, pepper, and cayenne pepper if desired.
- Gradually pour the cream mixture into the skillet with the lobster, stirring constantly. Cook on low heat until the sauce thickens, about 5-7 minutes.
- Once thickened, remove from heat and serve immediately over buttered toast or in puff pastry shells. Finish off with a sprinkle of freshly chopped parsley.
Notes
- Fresh, high-quality lobster meat makes all the difference.
- You can substitute milk with half-and-half if desired.
- Feel free to omit sherry or brandy if preferred.
