  • 1 pound cooked lobster meat
  • 2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 1 cup heavy cream
  • 1/2 cup milk
  • 3 large egg yolks
  • 1 tablespoon sherry or brandy
  • 1 teaspoon Dijon mustard
  • salt and pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 slices buttered toast or puff pastry shells
  • Fresh parsley, chopped

Instructions

  1. In a large skillet, melt the unsalted butter over medium heat. Add the finely chopped onion and sauté until translucent, about 3-4 minutes.
  2. Stir in the chopped lobster meat and cook for an additional 2-3 minutes.
  3. In a separate bowl, whisk together the heavy cream, milk, egg yolks, sherry or brandy, Dijon mustard, salt, pepper, and cayenne pepper if desired.
  4. Gradually pour the cream mixture into the skillet with the lobster, stirring constantly. Cook on low heat until the sauce thickens, about 5-7 minutes.
  5. Once thickened, remove from heat and serve immediately over buttered toast or in puff pastry shells. Finish off with a sprinkle of freshly chopped parsley.
