  • 24 oz. lobster meat
  • ½ cup butter (for sautéing)
  • 3 cloves garlic (finely chopped)
  • ¼ cup sherry
  • 1 Juice lemon
  • Salt and pepper (to taste)
  • ¼ cup parsley (chopped)

Instructions

  1. Start by adding the Ritz and oyster crackers to your food processor. Pulse a few times until you have coarse crumbs, then pour them into a bowl.
  2. In a separate glass mixing bowl, combine the crushed crackers, chopped parsley, and melted butter. Give it a good stir until everything is well mixed and set aside.
  3. Melt ½ cup of butter in a large pan over medium heat. Add the finely chopped garlic and sauté for about 30 seconds until fragrant.
  4. Stir in the sherry and lemon juice to the pan, seasoning it with salt and pepper. This mixture should be aromatic and slightly thick.
  5. If you’re using raw lobster, now is the time to add it to the pan. Cook until it begins to firm and changes color. If using steamed lobster, skip this and pour the sauce directly over it. Remove from heat.
  6. Carefully divide the lobster evenly among the ramekins or dishes you’ve chosen for baking.
  7. Pour that luscious crumb mixture over the lobster, ensuring it’s generously coated.
  8. Place the ramekins in a preheated oven at 350°F and bake until the lobster is cooked through and the crumbs turn a lovely golden brown, about 10 minutes.
