Delicious Loaded Balsamic Kale Salad for a Healthy Twist
Ingredients
Scale
- 2 tablespoons Olive oil
- 2 cloves Minced garlic
- 4 cups Kale
- 1 cup Cherry tomatoes
- 1 cup Fresh basil
- 1 cup Fresh mozzarella cheese
- 2 cups Cooked chicken
- 1/4 cup Balsamic vinegar salad dressing
- to taste Salt
- to taste Pepper
Instructions
- Combine the sliced tomatoes and basil in a small bowl. Gently stir them together and set aside to let the flavors mingle.
- Heat a large skillet over medium heat. Add olive oil and minced garlic. Sauté the garlic for about 30 seconds until fragrant.
- Add the chopped kale to the skillet. Toss for 30 seconds to 1 minute until the kale wilts slightly.
- Assemble salads by adding sautéed kale to each bowl. Top with cooked chicken, mozzarella, and tomato-basil mixture. Drizzle with balsamic dressing and season with salt and pepper.
