Description

A creamy and rich chicken dish featuring tender chicken breasts coated in a luxurious sauce made with Irish whiskey, heavy cream, and aromatic herbs. This easy-to-make recipe offers a unique flavor profile perfect for weeknight dinners or special occasions.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup Irish whiskey
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add the seasoned chicken breasts to the skillet and cook for 6-7 minutes per side until golden brown and cooked through. Remove chicken and set aside.
  4. In the same skillet, sauté the chopped onion until translucent, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
  5. Carefully add the Irish whiskey to the skillet, scraping up any browned bits. Let it simmer for about 5 minutes to reduce slightly.
  6. Stir in the heavy cream and Dijon mustard. Cook for 3-4 minutes until the sauce thickens.
  7. Add fresh thyme to the sauce and adjust seasoning with salt and pepper.
  8. Return the chicken to the skillet and spoon the sauce over it. Simmer for 3-5 minutes to heat through.
  9. Garnish with chopped parsley before serving.

Notes

  • For the best flavor, use a good quality Irish whiskey.
  • Fresh herbs like thyme and parsley significantly enhance the taste.
  • If the sauce is too thick, add a splash of chicken broth or more cream.
  • For a touch of heat, add a pinch of red pepper flakes.
  • Consider adding sautéed mushrooms or fresh spinach to the sauce for variations.
