  • 2 pounds carrots, diagonally cut into 2 to 3-inch pieces
  • 5 tablespoons butter
  • 4 cloves garlic, minced
  • 2 tablespoons honey
  • ¼ teaspoon salt, or to taste
  • ¼ teaspoon fresh ground black pepper
  • Chopped fresh parsley

Instructions

  1. Preheat your oven to 425˚F (220˚C) to prepare for roasting the carrots.
  2. Grease a rimmed baking sheet with cooking spray to prevent the carrots from sticking during roasting.
  3. Peel and diagonally slice the carrots into pieces about 2 to 3 inches long and set them aside.
  4. In a large nonstick skillet over medium heat, melt the butter. Add minced garlic and cook, stirring frequently, for about 3 minutes until the garlic is lightly browned but not burnt.
  5. Remove the skillet from heat and stir in the honey until the sauce is well combined.
  6. Add the carrot pieces to the skillet or a mixing bowl, pour the garlic butter honey sauce over them, season with salt and pepper, and toss until all carrots are evenly coated.
  7. Spread the coated carrots in a single layer on the prepared baking sheet. Roast for 22 to 25 minutes, or until the carrots are tender and caramelized.
  8. Remove from the oven, transfer to a serving plate, taste and adjust seasoning if needed, then garnish with fresh chopped parsley before serving.
