- 2 pounds carrots, diagonally cut into 2 to 3-inch pieces
- 5 tablespoons butter
- 4 cloves garlic, minced
- 2 tablespoons honey
- ¼ teaspoon salt, or to taste
- ¼ teaspoon fresh ground black pepper
- Chopped fresh parsley
Instructions
- Preheat your oven to 425˚F (220˚C) to prepare for roasting the carrots.
- Grease a rimmed baking sheet with cooking spray to prevent the carrots from sticking during roasting.
- Peel and diagonally slice the carrots into pieces about 2 to 3 inches long and set them aside.
- In a large nonstick skillet over medium heat, melt the butter. Add minced garlic and cook, stirring frequently, for about 3 minutes until the garlic is lightly browned but not burnt.
- Remove the skillet from heat and stir in the honey until the sauce is well combined.
- Add the carrot pieces to the skillet or a mixing bowl, pour the garlic butter honey sauce over them, season with salt and pepper, and toss until all carrots are evenly coated.
- Spread the coated carrots in a single layer on the prepared baking sheet. Roast for 22 to 25 minutes, or until the carrots are tender and caramelized.
- Remove from the oven, transfer to a serving plate, taste and adjust seasoning if needed, then garnish with fresh chopped parsley before serving.
