- 1 large green bell pepper, chopped
- 1 large red bell pepper, chopped
- 1 medium yellow onion, chopped
- 1 bunch green onions (scallions), chopped
- 1 head of garlic, peeled
- 1 bunch of parsley, stems removed
- 10–12 sprigs of fresh thyme
- 1–2 Scotch bonnet peppers (optional, for heat)
- 1–2 teaspoons salt (adjust to taste)
- 1 teaspoon black pepper
- 2–3 tablespoons lime juice or vinegar
- 1/2 cup olive oil (or vegetable oil)
- 1/2 cup water (adjust as needed for consistency)
Instructions
- Wash and roughly chop all vegetables and herbs. Remove seeds from peppers and Scotch bonnet if using. Strip thyme leaves from stems.
- Combine all ingredients—bell peppers, onion, green onions, garlic, parsley, thyme, lime juice or vinegar, salt, pepper, oil, and water—in a blender or food processor.
- Process until a thick, slightly textured paste forms. Add a bit more water for smoother consistency if needed.
- Adjust salt, citrus, or heat to taste for perfect balance.
- Transfer Epis to airtight jars or containers and refrigerate.
