- 1 lb (450g) ground beef or ground chicken
- 1 large egg
- ⅓ cup breadcrumbs (or almond flour for low-carb)
- ¼ cup grated Parmesan cheese
- 2 cloves garlic, minced
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon chopped parsley (optional)
- 1 tablespoon olive oil (for searing)
- 3 tablespoons unsalted butter
- 3–4 cloves garlic, finely minced
- ¼ teaspoon salt (adjust to taste)
- 1 tablespoon fresh lemon juice (optional)
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- In a large bowl, combine the ground meat, egg, breadcrumbs, Parmesan, garlic, onion powder, salt, pepper, and parsley. Mix gently until just combined.
- Roll into 1½-inch balls (about 16–18 meatballs).
- Heat olive oil in a skillet over medium heat. Add meatballs in batches and cook 3–4 minutes per side until golden brown. Remove and set aside.
- In the same skillet, melt butter over low heat. Stir in minced garlic and cook for 1–2 minutes until fragrant. Add lemon juice if desired.
- Return meatballs to the skillet and toss to coat in the sauce. Simmer 2–3 minutes until fully cooked and glazed.
- Garnish with parsley and serve warm over rice, pasta, or vegetables.
