Description

Ingredients

  • 1½ tablespoons Fish Sauce
  • 3 cloves Garlic, minced
  • 1½ tablespoons Palm Sugar
  • ½ teaspoon Salt
  • ½ teaspoon Roasted Coriander Seeds
  • ½ teaspoon Roasted Cumin Seeds
  • ½ teaspoon Roasted Black Peppercorns

Instructions

  1. Lightly toast coriander seeds, cumin seeds, and black peppercorns in a dry pan until fragrant.
  2. Transfer toasted spices to a mortar, add minced garlic, and pound into a fine paste.
  3. In a bowl, combine the spice paste with palm sugar, fish sauce, and salt.
  4. Coat the thinly sliced pork thoroughly with the marinade and let it marinate for at least 4 hours, or overnight for maximum flavor.
  5. To dry, sun-dry the marinated pork for 4-12 hours, or use a dehydrator set between 145-160°F for 4-8 hours until it is firm yet slightly moist.
  6. To cook, heat oil in a deep fryer or large pot to 350-375°F.
  7. Deep-fry the pork for 3-5 minutes until golden brown, or grill until charred and thoroughly cooked.
  8. Serve the crispy Moo Dad Deaw, optionally drizzled with lime juice.
