- 500 grams boneless chicken breast, diced
- 1 cup cornflour
- 1 tablespoon all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 2 eggs, beaten
- Oil for frying
- 2–3 dried red chilies, chopped
- 1 tablespoon ginger, minced
- 1 tablespoon garlic, minced
- 1 onion, thinly sliced
- 1 bell pepper, sliced
- 2–3 tablespoons soy sauce
- 1 tablespoon red chili sauce
- 1 tablespoon vinegar
- 1 tablespoon sugar
- Spring onions, for garnish
Instructions
- Prepare Chicken: In a bowl, combine diced chicken, cornflour, all-purpose flour, baking powder, salt, black pepper, and garlic powder. Mix well until the chicken is evenly coated.
- Add Eggs: Pour the beaten eggs into the chicken mixture and stir until well combined.
- Heat Oil: In a frying pan, heat enough oil over medium heat for deep-frying. You’ll need about an inch of oil in the pan.
- Fry Chicken: Once the oil is hot, carefully place the coated chicken pieces in the oil. Fry until golden brown and crispy, about 5-7 minutes. Make sure not to overcrowd the pan.
- Drain Excess Oil: Remove the fried chicken and place it on paper towels to absorb any excess oil.
- Prepare Sauce: In a separate pan, heat a tablespoon of oil. Add the dried red chilies, minced ginger, and minced garlic. Sauté until aromatic.
- Add Vegetables: Toss in the sliced onion and bell pepper. Cook for another 2-3 minutes until they are tender but still crisp.
- Combine Ingredients: Reduce the heat and add the soy sauce, red chili sauce, vinegar, and sugar to the pan. Stir until well combined.
- Add Chicken: Incorporate the fried chicken into the pan and toss it until well coated with the sauce and vegetables.
- Garnish and Serve: Remove from heat and garnish with chopped spring onions before serving.

- For a vegetarian option, substitute chicken with paneer or tofu.
- Adjust the spice level by modifying the quantity of dried red chilies.
