Description

These Creepy-Cute Mummy Veggie Wraps are a spooky, healthy, and kid-friendly Halloween treat. They are ready in under 30 minutes, making them perfect for parties or a fun weeknight snack.


Ingredients

  • 4 large flour tortillas
  • 1 cup shredded mozzarella or vegan cheese
  • 1 cup bell peppers (red, orange, yellow – julienned)
  • 1/2 cup zucchini (thinly sliced)
  • 1/4 cup red onion (sliced)
  • 1/2 cup baby spinach
  • 2 tablespoons olive oil
  • Salt & pepper to taste
  • Candy eyes (or small dots of sour cream/cheese and olives)

Instructions

  1. Sauté bell peppers, zucchini, onion, and spinach in olive oil over medium heat until softened. Season with salt and pepper.
  2. Cut each tortilla into thin strips (about ½ inch wide).
  3. Spoon the sautéed veggie mixture into the center of a tortilla. Top with cheese.
  4. Use the tortilla strips to wrap around the filling, leaving small gaps to resemble mummy bandages.
  5. Place the wrapped mummy veggies on a baking sheet lined with parchment paper.
  6. Bake at 375°F (190°C) for 10–12 minutes, or until the cheese is melted and the tortilla is lightly crisped.
  7. Remove from the oven and gently press candy eyes onto the wraps while warm. If not using candy eyes, use dots of cream cheese with sliced olives or mustard seeds.
  8. Serve immediately.
