These Creepy-Cute Mummy Veggie Wraps are a spooky, healthy, and kid-friendly Halloween treat. They are ready in under 30 minutes, making them perfect for parties or a fun weeknight snack.

- 4 large flour tortillas
- 1 cup shredded mozzarella or vegan cheese
- 1 cup bell peppers (red, orange, yellow – julienned)
- 1/2 cup zucchini (thinly sliced)
- 1/4 cup red onion (sliced)
- 1/2 cup baby spinach
- 2 tablespoons olive oil
- Salt & pepper to taste
- Candy eyes (or small dots of sour cream/cheese and olives)
Instructions
- Sauté bell peppers, zucchini, onion, and spinach in olive oil over medium heat until softened. Season with salt and pepper.
- Cut each tortilla into thin strips (about ½ inch wide).
- Spoon the sautéed veggie mixture into the center of a tortilla. Top with cheese.
- Use the tortilla strips to wrap around the filling, leaving small gaps to resemble mummy bandages.
- Place the wrapped mummy veggies on a baking sheet lined with parchment paper.
- Bake at 375°F (190°C) for 10–12 minutes, or until the cheese is melted and the tortilla is lightly crisped.
- Remove from the oven and gently press candy eyes onto the wraps while warm. If not using candy eyes, use dots of cream cheese with sliced olives or mustard seeds.
- Serve immediately.
