Instructions
- Boil the potatoes: Place cubed potatoes in salted water and bring to a boil. Cook for about 15 minutes until they are fork-tender, then drain and set aside.
- Mash the potatoes: In a mixing bowl, mash the drained potatoes with butter and warmed milk until smooth and creamy. Season with salt to taste, then keep warm.
- Cook the shrimp: In a skillet, toss the peeled shrimp with olive oil, paprika, garlic powder, salt, and pepper. Heat the skillet and sauté the shrimp for 2–3 minutes on each side until they turn pink and opaque. Remove from heat and set aside.
- Prepare the cream sauce: In the same skillet, melt butter and add minced garlic. Sauté for about 1 minute until fragrant. Pour in the heavy cream, bring to a gentle simmer, and stir in Parmesan cheese and Dijon mustard (if using). Let simmer for 3–5 minutes until the sauce thickens.
- Assemble the dish: Plate the warm, creamy mashed potatoes, top with the sautéed shrimp, and generously drizzle the garlic Parmesan sauce over everything. Garnish with fresh thyme.
