  • 1 bunch Fresh cilantro (for topping)
  • Salt (to taste)
  • Black pepper (to taste)

Instructions

  1. Clean the clams by soaking them in water for about 20 minutes.
  2. In a large pot, pour in the coconut milk and bring it to a gentle simmer over medium heat.
  3. Add the smashed lemongrass, minced garlic, and grated ginger. Stir and let infuse for 2-3 minutes.
  4. Season the broth with fish sauce, lime juice, and salt and pepper to taste. Add sliced chili peppers if desired.
  5. Introduce the cleaned clams to the pot, cover it with a lid, and let steam for 5-7 minutes or until they pop open.
  6. Discard any unopened clams after cooking.
