- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups diced potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/4 cup chopped celery
- 1/4 cup chopped carrots
- 2 tablespoons all-purpose flour
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Optional toppings: bacon bits, diced tomatoes, sour cream
Instructions
- In a large pot or Dutch oven, brown the ground beef with the chopped onion, celery, and carrots over medium heat. Drain off any excess grease.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Sprinkle the flour over the meat and vegetable mixture and stir well to coat. Cook for 1-2 minutes.
- Gradually whisk in the beef broth and Worcestershire sauce until smooth.
- Add the diced potatoes, salt, and pepper. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
- Reduce heat to low. Stir in the milk and shredded cheddar cheese until the cheese is melted and the soup is creamy. Do not boil after adding cheese.
- Serve the cheeseburger soup hot, garnished with your favorite toppings.
Notes
- For a thicker soup, you can add more flour or cornstarch slurry.

- This cheeseburger soup can be made low carb by omitting the potatoes and using cauliflower florets instead.
- For a crock pot version, brown the beef and onion separately, then combine all ingredients except cheese and milk in the slow cooker. Cook on low for 6-8 hours or high for 3-4 hours. Stir in cheese and milk during the last 30 minutes.
