  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/4 cup chopped celery
  • 1/4 cup chopped carrots
  • 2 tablespoons all-purpose flour
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional toppings: bacon bits, diced tomatoes, sour cream

Instructions

  1. In a large pot or Dutch oven, brown the ground beef with the chopped onion, celery, and carrots over medium heat. Drain off any excess grease.
  2. Stir in the minced garlic and cook for 1 minute until fragrant.
  3. Sprinkle the flour over the meat and vegetable mixture and stir well to coat. Cook for 1-2 minutes.
  4. Gradually whisk in the beef broth and Worcestershire sauce until smooth.
  5. Add the diced potatoes, salt, and pepper. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  6. Reduce heat to low. Stir in the milk and shredded cheddar cheese until the cheese is melted and the soup is creamy. Do not boil after adding cheese.
  7. Serve the cheeseburger soup hot, garnished with your favorite toppings.

  • For a thicker soup, you can add more flour or cornstarch slurry.

  • This cheeseburger soup can be made low carb by omitting the potatoes and using cauliflower florets instead.
  • For a crock pot version, brown the beef and onion separately, then combine all ingredients except cheese and milk in the slow cooker. Cook on low for 6-8 hours or high for 3-4 hours. Stir in cheese and milk during the last 30 minutes.
