- 8–10 slices Thick-cut bacon
- 16 ounces Frozen or fresh pearl onions
- 0.5 teaspoon Salt
- 0.5 teaspoon Ground black pepper
- 0.33 cup Water
- 3 tablespoons Brown sugar
- 1 tablespoon Apple cider vinegar
- 2 tablespoons Bourbon or brandy (optional)
Instructions
- In a skillet over medium heat, cook the sliced bacon until crispy, about 5-7 minutes. Transfer to a plate, leaving the fat in the skillet.
- Add the pearl onions to the skillet with bacon fat. Sprinkle with salt and pepper. Sauté for 6-8 minutes until lightly browned and tender.
- Pour in water, brown sugar, and apple cider vinegar. Stir, bring to a boil, then reduce heat to simmer, cover, and cook for 5-8 minutes until fork-tender.
- Remove lid and stir in bourbon or brandy, if using. Cook for 1-2 more minutes to reduce and thicken.
