Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 loaf pan with non-stick cooking spray.
- Combine the blackberries with 1/2 cup of sugar in a bowl and gently mash them with a fork.
- In a larger bowl, whisk together the eggs and remaining 1 cup of sugar, then mix in the vegetable oil and mashed blackberry mixture.
- Stir in the flour, baking soda, salt, and cinnamon until just combined.
- Pour the batter into the prepared loaf pan and bake for about 1 hour or until a toothpick comes out clean.
- Dust with powdered sugar before serving, if desired.
