  • 0.75 cup vegetable oil
  • 2.5 cups blackberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 loaf pan with non-stick cooking spray.
  2. Combine the blackberries with 1/2 cup of sugar in a bowl and gently mash them with a fork.
  3. In a larger bowl, whisk together the eggs and remaining 1 cup of sugar, then mix in the vegetable oil and mashed blackberry mixture.
  4. Stir in the flour, baking soda, salt, and cinnamon until just combined.
  5. Pour the batter into the prepared loaf pan and bake for about 1 hour or until a toothpick comes out clean.
  6. Dust with powdered sugar before serving, if desired.
