Description

Authentic Stuffed Cabbage Rolls are tender cabbage leaves filled with a savory mix of rice, seasoned ground meat, and herbs, then baked in a rich tomato sauce.


Ingredients

  • 1 large green cabbage (with large leaves)
  • 500 g (1.1 lbs) ground beef (or beef and veal mix)
  • 1 cup cooked white rice
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 2 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 700 ml (3 cups) tomato passata or crushed tomatoes
  • 1 tbsp tomato paste
  • 1 tsp sugar
  • Salt and pepper to taste
  • ½ tsp dried thyme or oregano
  • ½ cup water or vegetable broth

Instructions

  1. Boil a large pot of water. Remove the core and blanch the cabbage for 8–10 minutes, peeling off softened leaves as they loosen. Set aside 12–14 leaves.
  2. Sauté onion and garlic in olive oil until soft. In a bowl, combine with ground meat, rice, egg, paprika, salt, and pepper. Mix gently.
  3. Sauté onion and garlic in olive oil. Stir in tomato paste, add passata, sugar, herbs, salt, pepper, and broth. Simmer 10–15 minutes.
  4. Trim thick ribs from leaves. Place 2 tbsp filling in each leaf, fold sides, and roll tightly.
  5. Spread sauce on the bottom of a baking dish. Arrange rolls seam-side down, pour remaining sauce on top, cover, and bake at 350°F (180°C) for 1–1¼ hours.
  6. Rest for 10 minutes before serving. Top with sauce and garnish with parsley or sour cream.

Notes

  • This dish can be made ahead of time and frozen.
  • Serve with sour cream or fresh herbs for extra flavor.
