  • 2 eggs
  • 1/3 cup pure maple syrup
  • 2 teaspoons pure vanilla extract
  • 2 medium apples, diced small
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 375°F (190°C) and grease an 8×8 inch baking dish.
  2. In a large bowl, combine rolled oats, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate medium bowl, whisk together almond milk, eggs, maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the diced apples and chopped pecans.
  6. Transfer the mixture to the prepared baking dish and press down gently.
  7. Optionally, top with extra apple chunks and pecans for added texture.
